Weekend Brunch Idea
The star of your weekend brunch menu is here!
These homemade pancakes are easy to make and feature a special whipped cream that is sure to get you great reviews!
Who doesn’t love peaches and cream? I could ask the same about caramel! Combining the pancakes, fresh peaches and the salted caramel whipped cream is a full mouth party. The addition of the chopped nuts is great for adding a little texture.
This pancake recipe is my absolute favorite and it is so simple to make. As noted in the recipe, I opt out of greasing my pan and get this same uniform color every time I make these. You can definitely butter your pan if you prefer the crisp edges on your pancakes.
If you have never made pancakes with brown sugar, you have been missing out! I almost never use white sugar anymore, as I prefer the warmer flavor of brown sugar.
How to Make Fresh Whipped Cream
For the whipped cream, do not skip out on making it fresh. Cool whip and canned creams are not the same! Seriously, take the extra time and treat your taste buds! You freeze the mixing bowl just to make the whipped cream a little firmer. I have made it without freezing the bowl and it still tasted fine, just a little less thick.
If you are pressed for time, you could totally skip freezing the bowl and be fine. Another component you absolutely cannot skip is the powdered sugar. This sugar dissolves better than granulated sugar and it also adds to the thickness of the cream. Nobody wants watery, grainy whipped cream.
For the salted caramel sauce, you can buy any brand of sauce you prefer. I didn’t measure the sauce and basically used it as an excuse toe keep tasting the cream as I added more, until I got enough of the flavor I was wanting. You could literally eat the cream with a spoon! Should there be any leftover whipped cream, you and store it in an airtight container in the fridge.
Fresh Peaches vs Canned Peaches
Once it is time to top the pancakes, you can use peaches with or without the skin. The key is to use fresh peaches, rather than canned. They taste completely different.
I ate my pancakes without syrup, but if you prefer syrup, I recommend warming it first. Remember, most syrup bottles are not microwave friendly, so you will want to put it in a microwave safe bowl, prior to heating it.
